- ⅓ cup quick or old fashioned oats
- ⅓ cup alternative milk
- 2 tbsp pumpkin puree
- ½ tsp pumpkin pie spice (or ¼ tsp cinnamon, ⅛ tsp ginger, and ⅛ tsp nutmeg)
- ⅛ tsp salt
- splash vanilla extract
- Toasted walnuts or pecans for garnish (optional)
Add all ingredients to bowl and stir until well combined. Cover and refrigerate overnight. Garnish if desired and enjoy!
