Gluten Free Soul Cakes

Ingredients

  • 2 Tablespoons flaxseed meal

  • 6 Tablespoons water 

  • 4 Tablespoons Earth Balance

  • ½ cup peanut or almond butter 

  • ¾ cup sugar

  • 1 teaspoon baking soda

  • ½ teaspoon salt

  • 2 teaspoons vanilla extract

  • 2 Tablespoons cocoa powder

  • ¼ cup coconut flour

  • ½ cup almond meal

  • 1 ½  cup oat flour

  • ½ to ¾ cup chocolate chips or raisins

Directions

  1. Preheat oven to 365F (use convection setting if available)

  2. Line baking sheets with parchment paper.

  3. Measure flaxseeds into mixing bowl.

  4. Add water, earth balance, peanut butter, sugar, molasses, baking soda, salt and vanilla. Blend well.

  5. Add cocoa powder, coconut flour, almond meal, and oat flour. Stir to blend well.

  6. Stir in chocolate or raisins.

  7. Shape dough into rounds; place on prepared baking sheets.

  8. Bake about 10 minutes.
